Super Healthy Banana Bread
Bursting with all kinds of goodness, this moist chocolate-y banana bread is sure to satisfy! I like to substitute quinoa flour into my baking recipes for extra protein and nutrients, as well as coconut palm sugar (since its natural, unrefined, and has a low glycemic index) and a super healthy oil (like coconut). You can always use regular flour/sugar if that’s what is available – it will work great too!
2 Cups Quinoa Flour
2 Cups Coconut Palm Sugar
1 1/2 Teaspoons Baking Soda
1/2 Teaspoon Salt
1 Teaspoon “Up the Anti!” Spice Blend
4 Medium Mashed Bananas
3/4 Cup “Half Baked” Coconut/Pumpkin Seed Oil
1 Teaspoon Vanilla Extract
1/2 Cup Chopped Pecans/Walnuts
1/2 Cup Chocolate Chips
Mix all dry ingredients in a bowl (except nuts and choc chips).
Mix all wet ingredients in a different bowl and stir well.
Add wet ingredients to dry and mix well.
Dust nuts and chocolate chips with a little flour (this prevents them from sinking to the bottom), and add to the mixture to combine.
Grease a loaf pan with a little coconut oil spray, and fill with bread mixture.
Bake at 350’F for 1 hour or until a skewer comes out mostly dry. (Due to variance in oven temperatures, up to 10 minutes more or less in baking time may be needed for best results).
